Ingredients
2 cups sliced leeks
2 cups cubed, cooked boneless chicken breast meat
1 cup chopped celery
2 cups diced tomatoes, with liquid
1 medium yellow, red or orange pepper
5 cups low sodium chicken broth
1/2 cup mushrooms
1 cup rutabaga, cut into cubes
1 cup sliced zucchini
1 cup use canned or frozen green beans
seasonings:
1/2 tsp of oregano,
1/2 tsp thyme
1/2 tsp garlic,
1/2 tsp salt and pepper to taste
really any spices you like
Directions
In a large crock pot combine the leek, chicken, celery, green beans, tomatoes with the liquid, peppers, broth, rutabaga, mushrooms and zucchini.
Add in your spices that you prefer.
Put on High for 6 hours.
